March 28, 2008 Food Diary

Best Gluten Free bread I have EVER had!!!

I have not had gluten-free bread for about 6 months. I fail almost every time I make it and do not like store bought. Yesterday, I had such a craving for bread I went to the store and bought Bobs Red Mill Bread mix. I happened to get onto my myspace and one of my gluten-free friends had a posting from Epicurious magazine on baking gluten-free. Ironic huh??? Well I took two of the tips and tried them.1) Place a iron skillet filled with water in the oven with the bread to increase moisture (make sure you check the water and add more if needed2) Take the bread out of the bread pan when it is able to hold its own shape and place it on a pizza stoneI also added about 2 T Honey to the mix. Talk about the best gluten-free bread ever. I usually like my homemade bread warm. The next day I hate how it falls apart and MUST be toasted. Well, today I had a chicken salad sandwhich on the moistest white bread I have had in 1.5 years. Funny thing is I have used Bobs Red Mill before and it was just OK. I really think the pan of water made the world of difference!TRY IT....Gotta go and eat a peanut butter sandwhich. LOL

March 27, 2008 Food Diary

I could not sleep last night. I finally went to bed and was awakened by a SEVERE headache. I took some medication and went to bed with an icepack on my head. THEN I awoke to severe "d". I completely forgot about the sip of malt containing milk from yesterday.

I spent all morning trying to figure out why I was so sick. I was on the phone with my friend and she asked if the malt containing milk from yesterday "messed me up". UNBELIVABLE. ONE SIP!!!! and I feel like I have the stomach flu.

Today is soccer night so dinner will be something quick and easy. I try to stick to low carb (this week.... LOL) every day but Thursday.

Breakfast
FYI: I hate breakfast so bear with me on this one......
1 slice cold ham
2 cups Maxwell House Coffee
Coffee Mate Creamer

Lunch
Hamburger patty with Ketsup and horseradish
Green Beans with bacon bits

Snack
Pop Secret Chedder 1 step popcorn

Dinner
Marie Callender Chicken and Rice Micro meals
Green Beans

Snack (after soccer)
1/2 Mc D's Fries
Caramel Icecream


March 26, 2008 Food Diary

Breakfast
Bobs Red Mill Gluten Free Oats,
NOTE: this was my first time making these. They are a little hard for me. I was used to instant oatmeal. Next time I will follow the stove top (not microwave) directions

Lunch
Ham rolled in lettuce leaves with american cheese slices and Miracle Whip

Snack
STUPID me drank 1 sip of a box of chocolate milk to see if it tasted OK (it looked funny) for a friends child. After the sip I looked at the box and it said MALT.

I stood there and felt sooooo sad to know I was going to be sick soon.

Dinner
Baked Grouper (with parm cheese)
White rice with Cavenders Sodium Free Seasonings (Regular has gluten)
Green leaf salad with Oil and Vinegar

Snack
Motts Apple Sauce
Pop Secret popcorn

This Gluten Free Thing......

I decided to start this blog so I could share my gluten free life with others. A Gluten Free life is difficult to adhere to. Even more difficult to learn and "master". I use the term master VERY loosly with this. Once you know what you can eat....those darn companies go and change something. I swear I live a daily lide of calling companies to see what I can eat. With that being said, my focus of this blog is to share a day in the life. I hope that this helps newbies out there get a handle on things. I plan to put my personal views and experiences. Remember this......I am not a doctor. I get my info in some of the same places as you. My information could be incorrect. Please look at all products names and ingrediants and call the manufacturer. If I write something on here TOMARROW it is out of date. Stay healthy and enjoy this new life. You will feel better soon.
